There is so much to celebrate… holidays, loved ones, nature’s beauty… the list goes on and on. One of the best ways to commemorate special occasions is with baked goods. May it be cookies, pie or cake, it is hard not to be in a festive mood when something sweet is on the table.

Zesty Lemon-Lime Cake
To make cake, preheat oven to 350o F. Grease baking pan. In a large bowl, mix all “Cake” ingredients together until thoroughly combined (approx. 2 ½ minutes, hand mixer is recommended for best results), scraping down the bowl as needed. Bake for 25-30 minutes or until a toothpick or knife inserted into the center comes out clean (time will vary depending on the size of pan used; for cupcakes bake for approx. 18-20 minutes). Allow cake to cool for about 5 minutes before transferring to a wire rack to cool completely. Once the cake is cooling, prepare frosting. To make frosting, blend butter and cream cheese until smooth. Add powdered sugar, essential oils, and milk (start with 2 Tbsp., add more if needed). Mix on low until combined and then beat well on medium speed. Once cake is completely cooled, apply frosting. Additional zest can be added for decoration to the frosted cake. Store in the refrigerator. Enjoy!
